Fish and Chips

Fish and chips are the ultimate take away food, but it is so simple to make at home and add an amazing salad to really bring it to life.

For my batter, which can be used on any seafood (prawns, calamari, fish etc), I put some plain flour in one container, and mix one egg with a tablespoon of water and a pinch of salt in another bowl, and whisk the egg and water mixture with a fork. Then I dip the fish into the flour first to coat, and then into the egg. I place it straight in the deep fryer, and cook. Cooking time varies depending on the thickness of the fish, but whiting fillets shown in the picture take about 4 minutes.

I use frozen chips from the supermarket to simplify, which are also thrown into the deep fryer for about 4 to 5 minutes. You can tell when chips are cooked just by looking at them. If you prefer, you can oven bake the chips.

The last thing to do is to make a simple side salad to balance the meal and make it more healthy. This one just has some lettuce leaves, a simple dressing and macadamia nuts. It is a simple variation of my mango and macadamia salad which goes great with seafood.

Seafood is generally not a cheap option, but if you are careful with what seafood you buy you can keep the cost down. I aim to feed my family of 4 for under $20 with this meal, which is about the cost of one serve of fish and chips at the local pub.
