Homemade muesli

Homemade muesli is always a hit with any house guests we have, and it’s really easy to make. It’s great for breakfast or brunch, and can be eaten as is or served with milk or yoghurt. I also like to top with some fresh or dried fruit to balance it out a bit.

A basic muesli recipe of rolled oats and bran is pretty standard; but, I change the ingredients nearly every time to make it more interesting. The right choice of ingredients can really enhance the flavour and make breakfast much more exciting, and it will always work out cheaper than shop bought options.

Basic Ingredients

2 cups of rolled oats
1 cup of bran
2 cups of mixed seed
1 cup of coconut (desiccated or shaved)
1 cup of nuts

Options

For the seeds, I like to use sesame, poppy, chia, flax and pumpkin seeds (aka pepitas) as well as sunflower kernels – they are all good and work well together.

For the nuts, I like to use either hazelnuts or walnuts as they offer a nice robust flavour, but pretty much any nut(s) will work well.

Method

I add all of the muesli ingredients into a large bowl, and then tip in approximately 3/4 cup of oil, and mix it up well. I then tip half of the mixture out onto a large baking tray, and bake for about 8 minutes at 180 degrees Celsius, or until it turns slightly golden. It does burn quickly, so keep an eye on it. I have two oven trays, so I do both batches at once.

Once it’s golden brown, take it out of the oven and let it cool down. Then store in an airtight container – it keeps for several weeks.

To Serve

To serve the homemade muesli, I like to add dried cranberries and yoghurt, but you could add any fruit you like (dried or fresh), and use milk or the various alternatives available these days if you don’t like yoghurt.

This recipe is really yummy, but keep in mind it is quite high in fat so portion control is important – small serves of this are best, with added yoghurt and fruit to fill you up and keep the fat content under control.
